Elo uses gene editing tools to turn plants into biofac­to­ries for new food ingredients. It’s modifying a variety of high-yield crops to make a low-calorie sweetener inspired by monk fruit, an intensely sweet fruit native to China, as a replacement for sugar and artificial sweeteners. The company is also partnering with Dole to create a fungus-resistant variety of Cavendish bananas.
