The dairy industry generates 2 percent of all greenhouse gas emissions. Nobell Foods (formerly known as Alpine Roads) makes a more sustainable alternative. It reprograms soybean plants to grow casein — the dairy protein that gives cheese its stretch, melt, and mouthfeel — and adds salt, sugars, cultures, and plant-based fats to make animal-free cheese.
