Supplant

Using the forgotten half of the harvest

When farmers harvest corn, wheat, oats, rice, or sugar cane, they generate an under­uti­lized sidestream of cobs, straw, and hulls. Supplant uses enzymes from fungi to upcycle this plant fiber into low-calorie, low-glycemic sugars. That means more of the material grown on farms can enter the food system, making agriculture more sustainable.
